Bigoli festival

Event organized by the Pro-Costacciaro Association and aimed at promoting local dishes; it also offers possibilities for entertainment, with music, dancing and other forms of entertainment. The "Bigoli" are a typical gastronomic preparation, which has also achieved the recognition required by art.7, paragraph 1b, of the Regional Law of Umbria n.2 / 2015 on the discipline of festivals and popular festivals. They are presented as very thick spaghetti, they are fresh pasta obtained from the mixture of flour and water alone; the dough is then introduced into a machine that shapes it; the sauce consists of a tomato and basil sauce, which is tied to the pasta with the addition of ricotta. Typical of the typicality of the many townspeople of old age, as well as the presence in many families of the instrumentation to press for the preparation of the "bigoli", clearly archaic. Every year on 17th and 18th August.
